Chai Ice Cream with Saffron Oranges
Ice cream with strong notes of black pepper, ginger, cinnamon, cloves, cardamom, fennel and star anise. Whole spices that you toast yourself are best for this ice cream, but ground ones will work as well. Serve with zesty saffron oranges for a taste sensation.

Bula! Suva is Fiji’s capital and located on Viti Levu’s south-eastern coast and offers an eclectic mix of historical sites, museums, parks, local markets renowned for unique tapa cloth, jewellery, wood carvings and bowls, plus a vibrant nightlife.
There are P&O Shore Tours available in Suva for all ages and tastes. You can try the ever popular Nailililili Historical Tour by Long Boat, or book the Yanuca Island Day catamaran cruise for offshore snorkelling followed by a traditional Fijian lovo lunch. You can also watch a traditional firewalking ceremony and learn about the culture and stories that frame this tradition.
For a true Fijian island experience, take the Sawani Village Tour. Fijian warriors will escort you to join the chief in the preparation of Kava. Or, you can visit the Spice Farms and Nature Gardens.
For nature lovers, we recommend the COLO - I - SUVA Forest Park and Waterfall Tour. The area is teeming with birdlife and tropical flora and is home to over 14 different bird species, including scarlet robins, spotted fantails, Fiji goshawks, sulphur-breasted musk parrots, Fiji warblers, golden doves and barking pigeons.
The Wainadoi Zipline Tour, consisting of 10 observation platforms and eight horizontal traverses is a crowd favourite. It’s not for the faint hearted, but oh so fun. Or you can try the Kila Eco –Trek for a half day adventure into Fiji’s pristine rainforest at Kila Eco Park.

Find out moreMeet Mike Mihajlov, our Destinations Director. At P&O, we call him ‘Mr Destinations’. When you go cruising, you can bet that Mike or a member of his team has been there before you. They play an enormous part in developing P&O cruise itineraries and devising shore tour programs in collaboration with local Australian and New Zealand operators plus our friends in South Pacific communities.
Our photos show Mike at the Alotau Festival which is put on by the locals each time a ship visits and in the beautiful Trobriand Islands, located just off the east coast of Papua New Guinea.
And what is Mike’s favourite P&O destination? “For favourites, it’s a hard one but I’d have to say the top three would be Moreton Island, Mystery Island and Conflict Islands. Why? Because each is spectacularly beautiful and in each case P&O has a special relationship with the community there which makes the whole experience unique.”

Social distancing restrictions are slowly easing, but TikTok is still going crazy on socials. Try a #FlipTheSwitch or #SmallGestures challenge with your mates. Alternatively, boogie up a storm and TikTok it for all your followers. Get creative and have a laugh.
